January 2012 finds Teatime at Pope John II Cultural Center www.JP2CC.ORG catering a Leadership Mass Reception for 250 guests. The room was a partial stand up reception of finger foods featuring Hot Crab and Artichoke Dip, Grilled Indonesian Chicken, Marinated Roast Pepper Beef on Toasts w/ Cabernet Chipotle Cream, Fruits, Cheeses, Desserts including Apple Bavarian Torte and New York Cheesecake w/ Raspberry Coulis. The space looks out over a lovely courtyard, and there is ample parking for guests on this Catholic University property.

One more beautiful 2011 cake that almost slipped away! This was the first time I tried making these stunning roses using butter cream icing. With a touch of fresh flowers around the base this is one of the prettiest cakes I remember making the entire year.

As the end of 2011 draws near, here are several more of Teatime's wedding cakes that didn't get their own own blog posting! The green ribbon cake was a spring wedding and the groom wore his clan kilt. The green ribbon was the primary color of tartan being worn.

The second cake was a photo of the cake still in progress with a fondant swag draped across the front and side of the cake for an truly elegant effect.

The third cake was draped with hand painted yellow flowers and a horse drawn carriage on top!

Marinated Roast Pepper Beef w/ Chipotle Cabernet Cream is one of our very favorite appetizers! Roast beef marinated in a cider vinager-soy sauce- garlic and pepper marinade coarsley chopped upon a toasted French bread round. It is then drizzled w/ a cream sauce made with sour cream, lime juice, chipotle chilis and Cabernet wine. It has a rockin' kick, and we can't put them out fast enough!

The Cajun Trilogy is essential to Jambalaya - featured on this weekend's Friday Holiday party menu. The three critical ingredients to many New Orleans recipes feature bell pepper, celery and onion. In our version of the trilogy within the trilogy, we are using 3 different colors of bell pepper: red, yellow and orange which are slightly sweeter and milder than the classic green. Once the peppers, onion and celery are sauteed along with garlic, we add chicken stock, bay leaf, crushed tomato, chorizo sausage, boneless chicken chunks, shrimp and a healthy shake of Cajun Seasoning (there are many brands on the market to choose from). White rice is added in last 20 minutes and you have a spectacular menu entree that will knock your socks off!

New venue to check out - George Washington Masonic Temple in Alexandria VA, www.gwmemorial.org

This is another hidden gem right across the street from the King Street Metro. The ballroom is enormous, easily accommodating 200 plus guests. We catered wedding of 165 last weekend. They performed a ring ceremony on the stairwell, there were multiple spaces surrounding the ballroom to provide not only the bar, gift tables, cake table, but a photo booth as well. During the reception the venue provide tours by elevator to the rooftop observation deck where guests can see the Alexandria skyline overlooking the Potomac River. It is definitely worth checking out, ample parking and right off the Capital Beltway.

Bleedin' Armadillo Cake!! A recent creation for a local production of "Steel Magnolias" features the infamous groom's cake hidden in the garage. This particular critter, however, is carrying a delightful pink clutch as "the only difference between us and the animals is our ability to accessorize!"
The cake was of course red velvet and the icing was grey cream cheese and butter cream. It was a smash hit!

Cheese!! Our staff takes making a cheese board very seriously. Actually, Max at left went to town last week creating stars of cheddar, brie with cranberry/raspberry/walnut topping, pepper jack, and a blueberry goat cheese. They are garnished with garden herbs and Lady Apples. A wonderful fall appetizer!

We recently did a wedding reception for a couple who were avid book lovers. Their center pieces were stacks of vintage books. On the cake table pictured at left, Ruth created a 3 tier yellow butter w/ raspberry filling and the bride and groom not only had clusters and stacks of books scattered about, we added bowls of assorted hand made cookies. They made their own cake topper - a bookish looking couple with little tiny books at their feet. It was very whimsical, and I can't remember a more delightful couple! www.teatimeinc.com

Ruth created a wedding cake with hand painted flowers that was also served with a cheesecake display: pumpkin, apple Bavarian, chocolate marble and NY style w/ raspberry coulis. The room was stunning on a day that finally featured spectacular weather. We tied teal colored sashes around the chairs and each table had teal overlays. We were there the weekend before and while setting up there was a family of deer that stood just outside the glass windows. Really cool!

Saturday's wedding reception at the Hendry House in Arlington VA featured a cake prepared by Ruth in a Dotted Swiss design. The menu had a southern theme with Jambalaya, sweet potato spiral, grilled chicken and a signature drink: blackberry mohitos!

While the weather was very cool for Washington DC, the venue provided a very cozy setting for a guest count under 70 guests.

Last night's wedding was a small and intimate reception for a Washington DC executive chef and his Navy pianist wife. Shown here is their wedding cake, 3 tiers stacked off set, chocolate fudge w/ raspberry cream cheese filling and a chocolate ganache coating, decorated w/ white orchid blossoms. Their heavy appetizer fall menu included shooters of butternut squash and corn chowder, a cheese and cured meat platter, fall root vegetable fritters w/ goat cheese, and stuffed mushroom filled with herb cheese topped w/ caramelized onions. Great food and wine, wonderful memories.

The Incredible Hurricane Wedding Reception!

Irene may have blown through the Washington DC area, but we at the Thomas Birkby House soldiered on! The bride and groom were both pilots so I created this airplane cake as a surprise for the groom. The bride's cake was white on white with white orchids. The beautiful bride poses in front of the airplane cake, chocolate fudge with a raspberry filling. They had a blast cutting into it, taking a bite out of the cockpit crew!

What's New At Teatime? Bacon and Scallops!

Bacon Wrapped Scallops pose a challenge with proper cooking technique. Cook it enough for the bacon to be crispy: the scallop is rubbery. Cook it enough for the scallop to still be tender: the bacon is rubbery and undercooked. I experimented with this technique - precook the bacon, chop it coarsely and top the scallop with a generous amount. Cooked only long enough for the scallop to remain tender and a colorful tooth pic inserted sideways, this was the best of both worlds, a tender juicy sea scallop with a delicious smokey bacon topping. We couldn't get them out to the guests fast enough! But then again, what doesn't taste better with bacon!

This past Saturday the bride chose colors of pink and lime green. She wanted 3 square tiers off set but did not have a design in mind. She sent me a copy of her invitation that had small pink roses, and I created this cascade of pink flowers and lime green ribbon. The inside as chocolate fudge cake w/ a coconut cream filling. The bride handmade Brazilian candies that you see in the background. Some were chocolate and some were coconut. All good!

Chilled Thai Tomato and Crab Soup served in a martini glass! This refreshing and absolutely delicious appetizer was made with Farmer's Market fresh tomatoes, scallions, garlic, lemon grass, Thai chili, stock and coconut milk then garnished with lump crab meat and chives. With a subtle kick from the Thai chili, this light and cool beginning brought welcome relief from a sweltering July evening of plus 100 degree heat!

Our latest Wedding Cake creation. Teatime created this 4 tier wedding cake with a spiral of yellos and ivory flowers cascading across the front.

And the flavor?! The groom had always loved his Mom's "funfetti" cakes as a child. Ruth took her yellow butter cake and folded into the batter candy sprinkles to replicate the cake except it was NOT from a box mix! We added fresh strawberries as a filling for a twist. The guests couldn't get enough of it, they came back for seconds AND thirds!! It's a very simple design, but the flowers really pulled it all together.

Summer Mango Soup, what could be more refreshing on a hot July evening. This no bake soup is a puree of fresh mango, jimica, cucumber, garlic, fresh lime juice, jalapeno, and yogurt. It's pictured here with a single blackberry for garnish, but could also be served with a more savory garnish such as lump crab meat or coarsely chopped chilled shrimp and cilantro for color. The yogurt cuts the sweetness of the mango so it doesn't confuse the palate into thinking it's a smoothie!

What's New at Teatime? Yesterday's wedding featured Grilled Sesame Flank Steak on Bamboo Skewers. We marinade the flank in apple vinegar, soy, garlic and sesame oil for 2 days. Grilled, sliced and skewered then presented playfully in our signature "porcupine" it's fun to look at and delicious to eat! It's a great entree to serve on a hot summer menu, and it works great for a utensil free menu as well.

Sometimes What's New At Teatime isn't new at all. One of the most popular menu items requested is our signature Grilled Indonesian Chicken on Bamboo Skewers w/ Peanut Dipping Sauce. Boneless chicken breast is marinated for two days, grilled and then chilled. It is sliced and skewered on bamboo skewers. It is assembled as shown for a dramatic presentation and the peanut sauce is served on the side. Guests frequently ask "How do you get the skewers to stay like that?!" Sugar Spiced Smoked Apple Wood Salmon Filet

Smoked with our own apple tree branches, this appetizer is first rubbed with a mixture of sugar, cumin, chili powder, salt, paprika, black pepper and a pinch of cinnamon. We then slow smoke the salmon side over apple wood shavings. It is served here on a pewter platter with Carr's water crackers. It is a favorite among Teatime staff!

We started with a Rainbow Chopped Salad of Romain Hearts, Purple Cabbage, Mango, Asian Pear, Fugi Apple, Dried Sour Cherry, Walnut, Gorgonzola in a Shallot and Red Wine Vinaigrette. The main course was Salmon Filet w/ Roasted Red Bell Pepper Sauce, Roasted Asparagus Spears, and Rosemary Baby Potatoes. End notes are Mixed Berries in Lemon Curd w/ Ginger Snap. Not a morsel returned to the kitchen!

Beautiful Fall Wedding Cake and Reception

October Wedding Reception at Maryweather Manor in Leesburg, VA. The wedding cake was decorated with a chocolate fondant ribbon and fresh fall flowers. Menu highlights included a dessert buffet with sliced apples and hot caramel or hot chocolate sauce.

Maryweather Manor is a private venue on 400 acres in the Leesburg countryside. The views of surrounding mountains, vineyards, and fall foliage made this outside wedding reception spectacular.

Ceremony on a handsome stone terrace and reception beneath a tent in front of the mansion.

Menu also included a signature Red Delicious Apple Martini, Applewood Sugar Spiced Smoked Samlon Filet, and a selection of Virginia wines.

The bride wrote, "...we also really appreciated your willingness to collaborate with us when incorporating numerous custom elements intot the reception, including the signature cocktail, candied apple dipping station, and wedding wish card. On top of this, you created a beautiful wedding cake that was exactly what we wanted. Our cake cake was absolutely perfect and tasted as good as it looked. As a result of everyone's hard work from Teatime, all of our friends and family as well as ourselves had an amazing day celebrating our marriage."

Victoria's Fruit Display

One of Teatime's most beloved staffers, Victoria, was married this past October. Teatime catered her Hawaiian themed couple's shower. We wanted to do something special with our fruit display, something crafted especially for the bride and groom. This spectacular fruit arrangement features fresh pineapple, papaya, strawberries, cantaloupe melon, honeydew melon, fresh coconuts, and radish orchids made from daikon radishes. The bride and groom were to honeymoon in Maui, so the menu reflected the islands with Hula Hula Chicken Thighs, Coconut Shrimp, A Mixed Green Salad w/ Fresh Mango and Raspberry Vinaigrette, and appetizers that featured Ruth's Tropical Salsa w/ Tortilla Chips. The bride was radiant (as always)!

From time to time we receive a written referral from one of our past clients. I am including one from a delightful bride and groom, Mariana and Jeff, for whom we catered a wedding at Thomas Birkby House, http://www.birkbyhouse.com/ recently. A prospecitve new bride for spring 08 asked me for referrals, and this is the response from Mariana and Jeff:

"Ruth from Teatime provided us with service for our wedding in May 07. Ruth and her staff are very, very professional, the food was excellent!!! Months before our wedding we chose the menu, we told her what we liked , what we didn't like in foods in general. We came up with the perfect menu, after that we had the trial for the food, it was exquisite and immediately we decided to go with Teatime.
Ruth was working with us in every single step concerning food, tables, china, timetable, etc. and the delicious Wedding Cake! She will make the wedding cake you want. I can send you the pictures of our cake, beautiful!
They made a beautiful display of the tables and the food table was perfect, everything was at the right temperature, everybody in the wedding was very happy with the food. Regarding the price, we told her an estimated number of guests and one week before the wedding we changed the numbers and added more. She didn't have any problem, the price she gave us at the beginning was the price we ended up paying plus a little bit more for the people that we added at the last moment.
My husband and I did a lot of research for our wedding and Ruth's prices are very food for the excellent service she provides. I just have the best things to say about Teatime, and Ruth kept away a lot of pressure from us during that special day because she was soooo in charge of her part of the wedding without being put in the middle of the people. I have the best memory. I highly recommend Teatime for weddings, they help make our special day a perfect one!"

Husband Jeff also joined in with kind words, adding:

Summer Party Drink!

Summer parties are a great time to experiment with fun beverages! This weekend we hosted an event where we created what we believe to be the ultimate white sangria.

White Sangria Recipe

1.5 liter white wine (any table white wine will do, not too sweet)

1 bottle sparkling wine (brut)

1/4 cup triple sec (or other orange liquor)

1/2 cup brandy

assorted sliced fruits (suggested: ripe peaches, oranges, strawberries)

3-4 sprigs fresh mint

Place fruit in bottom of pitcher, add ingredients allowing enough space to add ice cubes. Keep long handled spoon in pitcher to stir fruits throughout sangria.

This is incredibly smooth, not too sweet, and packs a whollop!! But we haven't tasted anything quite as yummy as this one, and it's beautiful to look at as well.

This was served with a variety of hot and cold appetizers, the guests were especially fond of the spicy tropical salsa made with fresh pineapple, mango and local peaches.

Manage the summer heat and dog days by bringing good food and friends together!

Unique Wedding Location in Northern VIrginia

Teatime is always delighted to cater events in Northern Virginia, and one of the most beautiful spots can be found in downtown historic Leesburg, VA. It's the Thomas Birkby House www.birkbyhouse.com, where Teatime catered two beautiful weddings this past May. This historic home has a spectacular outside garden and patio with an stunning tent on one end of the gardens. Holly pulled out all the stops with an appetizer hour that featured no less than NINE appetizers, followed by a carved roast beef and chicken Marsala buffet, followed by a dessert buffet and wedding cake.
On Memorial Day we were back again with the bride and groom marrying in the Gazebo, followed by a cocktail hour on the patio, and a buffet luncheon under the tent. The staff at this facility is tremendously attentive, no detail is missed. Please check out their web site!

Spring Has Finally Arrived

After an all too brief break in Maui, I am back in the swing of things with spring events. The weekend after Easter found Teatime rocking and rolling with events. Friday night was a rehearsal dinner at a club house in Sully Station, Chantilly VA. These types of venues are great for smaller parties, and are generally not terribly expensive to rent. Saturday we catered a wedding reception at the Farr House in Fairfax City. This is a fantastic historic property right in Fairfax City. Their website is listed on our "resources" page at www.teatimeinc.com. Sunday was an anniversary party at Cabell's Mill, in Centerville VA. We had some crazy weather that day, but were still able to cater to a crowd of about 80 guests.

Mid Winter Adventures

Teatime has discovered a delightful new facility in Stafford VA, Rock Hill Plantation, www.rockhillplantation.com. Located approximately an hour south of Washington DC, the facility provides a lovely backdrop for a indoor or outdoor ceremony. Check out their site, we were there Sunday March 4th, with a reception of 100 guests. The weather was too chilly for the ceremony to be held outside in the gazebo, but the reception grand room could accommodate both the ceremony and the reception. Guests were particularly enamored with the white chocolate and raspberry filled wedding cake!

Another find earlier this month is the American Legion right in the heart of Fairfax City, VA. While they don't have a website describing the space, you can get general information at www.post177.org, and the contact person is Cindy@post177.org. We did a police officer retirement party March 2, and the space is very pretty, the ballroom can accommodate at least 150 plus guests. In the warm weather, there is a wrap around balcony that provides even more guest accommodations. I didn't even know this property was there!

Trend setting appetizer of 2007? Can it possibly be pigs in a blanket? Stranger things have happened!

Teatime Starts the New Year Running

December is always a busy and exciting time of year for a cateter and 2006 was no different. Along with countless private events held in offices and homes, Teatime also catered a wedding reception only 2 days after Christmas at the Barns of Wolf Trap!
We then flew through New Year's Eve, and no rest for the weary as we slammed into the first weekend of January with 2 events at Newton White Mansion. The first event was an afternoon tea for 140 ladies, followed by a wedding reception for 200. Newton White Mansion is a historical property in Mitchelville MD and is a stunning property, definetly worth checking out.

If you are newly engaged over the holidays, now is the time to be talking with caterers. It's only Monday and I already have 4 new clients I am talking with this week!

Holday Specialty Drinks

Mistletoe Martinis were a big hit at a December 2nd, 2006 holiday party. We set the bar with a list of signature drinks including mistletoe martinis, white christmas, candycane-tini, and white snowball.
Mistletoe Martini - Midori, Coconut Rum, and pineapple juice was the most popular
White Christmas - Godiva White Chocolate, Vanilla Vodka was a smooth treat
White Snowball - Vanilla Vodka, Grand Mariner, white cranberry and dried cranberry for garnish
Candycane-tini made one young woman go in search of a couch!

Having at least one signature cocktail at your next event is a fun way to personalize the event, is a great conversation starter, and leaves your guests buzzing with details of your fantastic party.

It doesn't have to be a holiday party, signature coctails work year round. A fabulous summer option is a Stoli-doli, with Regular Vodka, Vanilla Vodka, Coconut Rum and Pineapple juice. Break out the tiki-torches!
